For the Peach Filling

  • 6-8 fresh peaches or 4 cups canned or frozen peaches
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon cornstarch optional, for thickening
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Topping

  • 200 g 200g self-raising flour
  • 50 g caster sugar
  • 100 g unsalted butter, cold and cubed
  • ½ teaspoon salt
  • 150 ml whole milk
  • 1 teaspoon vanilla extract
  • Optional: ½ teaspoon cinnamon for extra flavor in the topping

Instructions 

Preheat the Oven

  • Preheat your oven to 350°F (175°C).

Prepare the Peach Filling

  • If using fresh peaches: Peel, pit, and slice them.
  • In a large bowl, combine the peaches with granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch (if using), lemon juice, and vanilla extract. Stir until peaches are evenly coated.
